Cajun Chicken Vodka Pasta

This Cajun Chicken Vodka Pasta is the best pasta! It’s creamy, spicy and brings a great punch of flavor. This pasta is made with chicken, but easily tastes just as great without the meat if you are vegetarian! Actually, most times I eat it without the meat! 

This pasta is so easy to make and comes together so quick! The pasta is also super versatile. It’s made with mushrooms, onion, and jalapenos but you can throw in whatever veggies you have in the fridge to use up leftover produce. The Cajun seasoning really adds a great flavor to the vodka sauce. The mozzarella cheese binds so greatly to the linguine and sauce. I promise you every bite will be super flavorful.

INGREDIENTS

Yields: 4 large servings 
Prep Time: 15 minutes >> Cook Time: 20 minutes

For the chicken:
2 lbs of uncooked chicken breast
1 tbsp of cajun seasoning
1/2 tbsp of minced garlic
1 tbsp of olive oil

For the pasta:
1 tbsp of olive oil
1 tbsp of minced garlic
1 tbsp of cajun seasoning
1 fresh jalapeno, sliced (use pickled if desired) (use 2 if you like it spicy)
1 cup of sliced mushrooms
1 large red onion, sliced
1 – 24 oz. of vodka sauce
2 tbsp of heavy cream (add more if desired)
8 oz. of linguine, cooked
1/2 cup of shredded mozzarella cheese
1/2 tbsp of crushed red pepper
1 tbsp of chopped parsley for garnish

*This recipe is meant to be a quick recipe, if you would like to make your own vodka sauce, that is perfectly fine! If I am not short on time, that is how I generally make it. 

INSTRUCTIONS

1. Start cooking your pasta, while preparing your chicken. Wash the uncooked chicken and trim out any excess fat. Season with Cajun seasoning and garlic. In a frying pan, heat oil and add in the chicken. Cook for 7-10 minutes or until the chicken is cooked. Slice the chicken and reserve to the side.

2. While the pasta and chicken is cooking, prepare the sauce. In a large skillet pan, heat oil and garlic on medium-high heat. Add in veggies and Cajun seasoning. Once the onions are cooked through, add in the vodka sauce and heavy cream. 

3. Let the sauce come to a boil, and then turn the heat down to low. Add in pasta, and give it a stir. Toss in the chicken, cheese, crushed red pepper, and parsley. Top with chicken and serve immediately.
